Cultivation method:
Sow winter thyme seeds indoors in spring, 6 to 8 weeks before the last frost. Maintain a temperature of 65 to 70 degrees F (18 to 21 degrees C) to encourage germination in 14 to 21 days. Transplant seedlings outdoors when all danger of frost has passed, in well-drained soil with full sun.
Plant shallowly and space plants 8 to 12 inches apart to allow for proper spread. Thyme requires only moderate watering as it tolerates drought well. Prune regularly to encourage compact growth and remove spent flowers to prolong leaf production.
Harvest stems as needed, cutting above a node to encourage new growth. Use fresh or dry to preserve flavor. In cooking, it enhances meats, soups, and sauces, adding a Mediterranean touch to your dishes.
