Cultivation method:
Start celeriac seeds indoors 6 to 8 weeks before the last expected frost date. Sow the seeds on the surface of a soilless growing medium, without covering them, as they need light to germinate. Maintain a temperature of 18°C (65°F) and provide abundant light. Once the seedlings are well developed, harden them off and transplant them outdoors in late May, when all danger of frost has passed.
In areas with a long growing season, seeds can also be sown directly outdoors. Plant in rich, well-drained soil, spacing plants 12-18 inches (30-45 cm) apart. Ensure regular watering throughout the season to encourage root development.
Harvest the roots when they are 2 to 4 inches (5 to 10 cm) in diameter. Roots harvested in the fall, after the first frost, have a stronger flavor and keep better over winter.
