Cultivation method:
Sow seeds indoors about 5 weeks before the last frost date, in a soilless mix. Maintain a germination temperature of 20°C (70°F). Once seedlings are well-developed, harden them off before transplanting outdoors in late April or early May, when the soil is sufficiently warmed.
Plant in rich, well-drained soil and maintain regular irrigation throughout the season. Space plants 12 to 14 inches (30 to 35 cm) apart and leave 24 to 30 inches (60 to 75 cm) between rows. Fertilize lightly but frequently to support optimal growth.
When the heads begin to form, use the large outer leaves to shade the delicate spirals from the sun, preserving their vibrant color. Harvest the heads when they reach a size of 15 to 20 cm (6 to 8 inches) in diameter, cutting carefully with a sharp knife.

Romanesco cauliflower is more than just a vegetable: it is a true work of edible art. Ideal to be enjoyed raw, steamed, roasted or sautéed, it seduces with its versatility and refined taste.
