Soil preparation
'Dolico Veneto' bean prefers a light, well-drained soil, with a pH around 6.5 . Before sowing, enrich the soil with well-rotted compost for vigorous growth.
Sowing
Sow directly into the ground when soil temperature reaches 16°C (60°F) to ensure rapid germination.
Plant seeds 1 inch (2.5 cm) deep and space them 3 inches (8 cm) apart in rows 18 to 28 inches (45 to 70 cm) apart.
For a prolonged harvest, carry out successive sowings every 10 days until mid-July .
Maintenance and harvesting

Ingredients (for 4 people)
🫘 250 g dried 'Dolico Veneto' beans (or 500 g fresh)
🍅 1 can of crushed tomatoes
🧄 2 cloves of garlic, chopped
🧅 1 small onion, chopped
🫒 2 tbsp extra virgin olive oil
🌿 1 tsp dried oregano
🧂 Salt and pepper to taste
🌶️ 1 pinch of red pepper (optional)
Preparation
Soak the dried beans in cold water for 12 hours then drain them.
In a saucepan, sauté the garlic and onion in olive oil until golden.
Add the beans, crushed tomatoes, oregano, salt, pepper and chili.
Cover with water and simmer over low heat for 45 minutes to 1 hour , until the beans are tender and the sauce is reduced.
Serve hot with a slice of toasted bread rubbed with garlic 🥖 or as an accompaniment to a meat or fish dish.
