Rich in vitamins and minerals , it is also renowned for its digestive and antioxidant properties.

Cultivation method

Italian parsley grows well in full sun or partial shade , in rich, light, well-drained soil. Seeds can be started directly in the ground in spring , or started indoors 6 to 8 weeks before the last frost for an earlier harvest. Since germination is slow (about 14 to 21 days ), it is recommended to soak the seeds in water for 24 hours before sowing to speed up the process. Sow the seeds 1/4 inch deep , in rows 10 inches apart, then thin the plants to 6 inches once they have emerged. Regular but moderate watering is essential to prevent the soil from drying out. The more leaves you harvest, the more the plant will continue to produce throughout the season.

Use and benefits

Italian parsley is a fresh and powerful condiment , ideal for enhancing the flavor of sauces, dressings, soups, stews and salads . It is also the base of Lebanese tabbouleh and chimichurri , an Argentinian sauce perfect for grilled meats. Rich in vitamins A, C and K , iron and antioxidants, it supports digestion and stimulates the immune system.

Easy to grow and harvest, Italian parsley is an essential herb in the vegetable garden, which keeps well fresh, dried or frozen to enjoy all year round.
