Dill 'Bouquet' (Anethum graveolens) – Offered by Ferme Tourne-Sol

Dill 'Bouquet' is a versatile aromatic herb , appreciated for its finely cut foliage and its fresh, slightly aniseed scent . It wonderfully enhances salads, fish dishes and soups such as borscht . Its fragrant yellow flowers are essential for pickled gherkins . Easy to grow, it grows quickly and adapts well to open ground or in pots.

Harvest young leaves for a milder flavor. Cut as you go to encourage regrowth.

Let a few plants flower to harvest the seeds, ideal for spices or marinades.

For continuous production , sow in succession every 3 weeks.

Recipe for pickled gherkins with fresh dill

• 500 g of small fresh pickles
• 500 ml of white vinegar
• 250 ml of water
• 1 tbsp sea salt
• 1 tbsp sugar
• 2 cloves of minced garlic
• 1 bunch of fresh dill
• 1 tbsp mustard seeds

  1. Wash and scrub the pickles.
  2. In a saucepan, bring the water, vinegar, salt and sugar to a boil.
  3. In sterilized jars, place the dill, garlic and mustard seeds.
  4. Add the pickles and cover with the hot liquid.
  5. Close and leave to macerate for at least 2 weeks before tasting.

Dill Cream Sauce for Fish

• 200 g of crème fraîche or plain yogurt
• 1 tbsp chopped fresh dill
• 1 tsp mustard
• 1 tbsp lemon juice
• Salt and pepper to taste

Mix all ingredients and serve chilled with grilled salmon, steamed potatoes or white fish.
