Salsify Mammoth Sandwich (Tragopogon porrifolius), offered by the seed company WH Perron

Mammoth Sandwich Salsify is an heirloom variety known for its long, smooth, creamy white roots. With its delicate oyster-like flavor, it is ideal for enhancing soups and other savory dishes. This hardy root crop is a unique and nutritious addition to any vegetable garden.

Latin name : Tragopogon porrifolius
Maturity after sowing : 150 days
Root size : 15-20 cm x 3-4 cm
Color : Cream white
Formulation : Untreated
Companion plants : Carrot, lettuce, onion, parsnip, leek
Enemy plants : Artichoke, endive

Growing Tips:

Sow directly into the open ground as soon as the soil can be worked in spring. Prepare a loose, well-drained soil enriched with organic matter and sow the seeds at a depth of 1.5 cm, spacing the rows 30 cm apart. Young plants can be thinned to 5-10 cm to allow good root development.

Salsify prefers a location in full sun or partial shade. Maintain consistent moisture to prevent the roots from becoming fibrous, but avoid overwatering. The roots can be harvested in the fall or left in the ground over winter, as they tolerate cold well.

A rustic and refined vegetable!

With its unique taste and soft texture, Mammoth Sandwich salsify is an essential ingredient for lovers of traditional and gourmet cuisine. Easy to grow and resistant to cold, it will easily find its place in your vegetable garden for a touch of culinary originality.
