Organic 'Great White' tomato (Solanum lycopersicum) from the seed company Gaia, an exceptional variety with a fruity taste

With its creamy white flesh and delicately sweet taste reminiscent of pineapple, melon and guava , the 'Great White' Tomato is a unique heirloom variety. Producing large fruits of 450 g to 900 g (1 to 2 lbs) , it is very juicy and contains few seeds , making it perfect for eating fresh, in salads or in sauces. Its tropical flavour makes it an excellent choice for lovers of original and sweet tomatoes.

Cultivation method

Sow seeds indoors 6-8 weeks before planting out, then transplant to open ground after the last frost , when night temperatures are above 12°C . Plant 3-6 mm (1/8-1/4") deep , spacing plants 60-90 cm (24-36") apart and rows 120-180 cm (4-6') apart. This indeterminate variety requires strong staking , as its fruit can become very heavy.

Harvesting and storage

Harvest tomatoes when they are a uniform creamy white color and slightly soft to the touch. For best flavor , ripen directly on the vine or harvest slightly green and ripen off the vine at 72°F (22°C).

Store tomatoes at room temperature , in a well-ventilated area, away from direct sunlight. For best storage, place them in a cool place (12-21°C) with a relative humidity of 95% . Avoid the refrigerator, as this alters their texture and taste.

Long-term preservation methods

Freezing: Cut them into quarters or freeze them whole for future use in sauces or coulis
Drying: slice them and let them dehydrate slowly for a concentrate of flavors
Preserve: prepare a sweet tomato sauce or a fruity ketchup to accompany your dishes

Recipe: Homemade Fruit Ketchup with 'Great White' Tomato

This homemade ketchup combines the sweetness of the 'Great White' Tomato with fruity and spicy flavors for a perfect sauce with grilled meats, cheeses or vegetarian dishes.

Ingredients

  • 1 kg 'Great White' tomatoes, peeled and diced
  • 1 apple, peeled and grated
  • 1 peach or 1 pear, peeled and cut into small pieces
  • ½ cup apple cider vinegar
  • ½ cup cane sugar
  • 1 tbsp honey (optional)
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • ½ tsp cinnamon
  • ½ tsp salt
  • ¼ tsp cayenne pepper (optional, for a spicy kick)

Preparation

  1. Brown the onion and garlic in a saucepan with a drizzle of olive oil for 2 minutes
  2. Add the tomatoes, apple, peach (or pear), vinegar and sugar , then bring to the boil.
  3. Add the spices (cinnamon, ginger, salt, cayenne pepper) and simmer over low heat for 45 minutes , stirring regularly.
  4. When the mixture begins to thicken, blend it in a blender or hand blender until smooth.
  5. Let cool and store in sterilized jars in the refrigerator
