The 'Bush Beefsteak ' tomato is an heirloom variety known for its compact growth and early maturity . Despite its bushy height of just 90 cm (3 feet) , it produces an abundance of large 225 g (8 oz) beefsteak tomatoes in clusters. Ideal for short-season regions , it offers plump, flavourful fruit that is perfect for thick slices in sandwiches, fresh salads or rich sauces.

Unlike other beefsteak tomatoes, which often grow on large plants, 'Bush Beefsteak' takes up little space and requires minimal staking . This makes it perfect for small gardens, growing in pots or on balconies, while still providing generous harvests.

Cultivation method

Sow seeds indoors 6-8 weeks before planting out, then transplant to open ground after the last frost , when night temperatures are above 12°C . Plant 3-6 mm (1/8-1/4") deep , spacing plants 60-90 cm (24-36") apart and rows 120-180 cm (4-6') apart. Although compact, this indeterminate variety benefits from light staking to support the weight of its fruit.

Harvesting and storage

Harvest tomatoes when they reach a nice, even red color and are slightly firm to the touch. For best flavor , let them ripen on the vine or harvest them slightly green to ripen off the vine at 72°F (22°C).

Store tomatoes at room temperature , in a well-ventilated area, away from direct sunlight. For best storage, place them in a cool place (12-21°C) with a relative humidity of 95% . Avoid the refrigerator, as this alters their texture and taste.

Long-term preservation methods

Freezing: Cut them into quarters and freeze them for use in sauces or soups
Drying: Slice them and let them dehydrate slowly to obtain intensely flavored dried tomatoes.
Preserve: Prepare peeled tomatoes or a homemade sauce to enjoy all year round
