Cultivation method:
Sow seeds indoors 6 weeks before the last frost , then transplant into the ground in late spring once the soil has warmed up. Plant 1/4 to 1/2" (6 to 12 mm) deep , spacing plants 18-24" (45 to 60 cm) apart and rows 36-48" (90 to 120 cm) apart. Germination takes 15-20 days at an optimum temperature of 70°F ( 21°C) . Provide full sun exposure to encourage the development of its purple hue.

- 500g 'Purple Blush' tomatillos , halved
- 1/2 cup pumpkin seeds (pepitas)
- 1 serrano or jalapeño pepper , minced
- 1/2 red onion , chopped
- 2 cloves garlic , crushed
- 1 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- Juice of 1/2 lime
- 1/2 cup fresh cilantro, chopped
Preparation :
- Preheat the oven to 200°C (400°F) .
- Arrange the halved tomatillos on a baking sheet covered with baking paper.
- In a bowl, mix the pumpkin seeds, chili pepper, onion, garlic, olive oil, cumin, paprika and salt .
- Spread this mixture over the tomatillos and roast for 20 to 25 minutes , until the tomatillos are tender and lightly caramelized.
- When removed from the oven, add the lime juice and fresh coriander .
- Serve hot as an accompaniment to grilled meats, tacos or as a topping for a bowl of rice or quinoa .
