Tomatillo 'Gaia's Big' is an exceptional variety from the Gaia farm, where it has self-seeded and adapted naturally . Producing larger fruits than other tomatillos, it also stands out for its unique flavor, both sweeter and tangy . Vigorous and very productive , this variety is perfect for gardeners looking for generous fruits for sauces, stews and homemade salsas .

Cultivation method:

Sow seeds indoors 6 weeks before last frost , then transplant into the ground in late spring when the soil is warm. Plant 1/4 to 1/2" (6 to 12 mm) deep , spacing plants 18-24" (45 to 60 cm) apart and rows 36-48" (90 to 120 cm) apart . Germination takes 15-20 days at an optimum temperature of 70°F ( 21°C) . This variety prefers full sun , well-drained soil and moderate watering for best production.

Harvest and uses:

Harvest when the husks fill out and begin to split . These large fruits are perfect for sauces, stews and marinades , offering a nice acidity that enhances meats.

Recipe: Spicy 'Gaia's Big' Tomatillo Sauce for Grilled Meats 🔥🍖

A tasty, slightly tangy and spicy sauce, perfect to accompany grilled meats, roast chicken or even a steak !

Ingredients (for 4 servings):

  • 500 g 'Gaia's Big' tomatillos , cut into quarters
  • 1 jalapeño pepper , minced (or more, to taste)
  • 1/2 red onion , chopped
  • 2 cloves garlic , crushed
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • The juice of 1 lime
  • 1 tbsp honey (optional, to soften the acidity)
  • Salt and pepper to taste
  • 1/2 cup fresh cilantro, chopped

Preparation :

  1. In a saucepan, heat the olive oil and sauté the onion and garlic for 2 minutes, until translucent.
  2. Add the tomatillos and chili pepper , then cook over medium heat for 10 minutes , stirring regularly.
  3. Stir in the cumin, paprika, salt and pepper , then simmer for another 5 minutes , until the tomatillos are very tender.
  4. Remove from heat and add lime juice and honey . Blend in a blender or with an immersion blender until smooth.
  5. Add chopped coriander just before serving for a touch of freshness.

Serve this sauce hot or cold with grilled pork chops, roast chicken or even grilled vegetables .
