Cultivation method:
Sow seeds indoors 6 weeks before last frost , then transplant into the ground in late spring when the soil is warm. Plant 1/4 to 1/2" (6 to 12 mm) deep , spacing plants 18-24" (45 to 60 cm) apart and rows 36-48" (90 to 120 cm) apart . Germination takes 15-20 days at an optimum temperature of 70°F ( 21°C) . This variety prefers full sun , well-drained soil and moderate watering for best production.

Ingredients (for 4 servings):
- 500 g 'Gaia's Big' tomatillos , cut into quarters
- 1 jalapeño pepper , minced (or more, to taste)
- 1/2 red onion , chopped
- 2 cloves garlic , crushed
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- The juice of 1 lime
- 1 tbsp honey (optional, to soften the acidity)
- Salt and pepper to taste
- 1/2 cup fresh cilantro, chopped
Preparation :
- In a saucepan, heat the olive oil and sauté the onion and garlic for 2 minutes, until translucent.
- Add the tomatillos and chili pepper , then cook over medium heat for 10 minutes , stirring regularly.
- Stir in the cumin, paprika, salt and pepper , then simmer for another 5 minutes , until the tomatillos are very tender.
- Remove from heat and add lime juice and honey . Blend in a blender or with an immersion blender until smooth.
- Add chopped coriander just before serving for a touch of freshness.
