French thyme is a hardy perennial variety in zones 4 to 9 , particularly prized for its mild and sweet flavor , more subtle than that of English thyme. Its narrow, grayish leaves give off a refined fragrance that blends perfectly with stews, marinades and grills . Appreciated in French and Mediterranean cuisine , it is also an excellent ally in the garden, attracting pollinators and repelling certain pests. Easy to grow, it thrives in well-drained soil and in full sun , both in the ground and in containers.

Used since ancient times, thyme was burned in Greek temples to purify the air and ward off disease. The Romans added it to their baths for its antiseptic and toning properties . In cooking, it is a mainstay of the bouquet garni and an essential ingredient in many Provençal recipes.

Cultivation method

Seeds require cold stratification for 2-4 weeks before sowing. Sow indoors 10 weeks before last frost , on the surface, as they need light to germinate. Keep the substrate slightly moist but not excessively, as thyme is sensitive to standing water.

Once the seedlings are established, transplant them into the ground after the last frost , spacing them 15 to 20 cm (6-8") apart and leaving 45 to 60 cm (18-24") between rows . It prefers poor, sandy, well-drained soil , with moderate watering , as it tolerates drought very well.

Harvesting and conservation

Harvest the stems in the morning , when the concentration of essential oils is at its peak. Regular pruning promotes denser growth and abundant foliage.

Preservation methods

  • Fresh : Store in the refrigerator in a perforated plastic bag for up to two weeks
  • Dried : Hang in small bunches in a warm, dry, well-ventilated place, then store in an airtight container.
  • Frozen : Chop and place in ice cube trays with water or olive oil for easy use in cooking
