Cultivation method
Start seedlings indoors 10 to 12 weeks before planting out . Transplanting is highly recommended , as celery is sensitive to cold temperatures.
Transplant 2 to 3 weeks before the last frost , ensuring that the temperature does not drop below 12°C during the day and 4°C at night , to avoid premature bolting.
It prefers rich, moist, well-drained soil , with regular watering to avoid fibrous stems.
Harvesting and conservation
Harvest 85 days after sowing , when the stems are well formed and still tender . For a milder taste, tie the leaves together two weeks before harvest to enhance the natural whitening effect.
