Spread: rapid growth and compact habit
Plant height: 20 to 30 cm
Quantity per pack: ± 500 seeds
Companion plants: beans, alliums, carrot, celery, petunia, nasturtium, calendula, marigold, dill
Enemy plants: strawberry
Cultivation method
Sow directly into the ground as soon as the soil can be worked, when the soil temperature is above 4°C . Space seeds 4 to 6” (10-15 cm) between plants and 18 to 24” (45-60 cm) between rows. Germination takes 4 to 8 days at an optimum temperature of 7-21°C . For a continuous harvest, sow every two weeks and favor a partially shaded location in summer to slow down bolting.
Harvesting and storage
Harvest young leaves as early as 4 weeks after sowing , cutting back as you go to encourage regrowth. For a milder flavor, harvest before flowering . Mature leaves have a more pronounced flavor, and the flowers are also edible.
Store fresh arugula in the refrigerator , in a perforated bag, where it will keep for 3 to 5 days . To extend its shelf life, wash and spin dry the leaves before placing them in an airtight container with paper towels.
Long-term preservation methods
Freezing: Blend the arugula with olive oil to incorporate it into sauces or pestos.
Dehydration: Dry the leaves to powder them and use them as a seasoning.
Lactofermentation: mix the arugula with salt and let it ferment for an original and tangy touch.
Lactofermentation of arugula
Lactofermentation is an ancient method that preserves arugula while developing its flavors and increasing its probiotic benefits. Here's how to do it:
Ingredients :
- 200 g fresh rocket
- 1 tbsp non-iodized salt
- 500 ml of non-chlorinated water
- 1 clove of garlic (optional)
- Spices of your choice: peppercorns, mustard seeds, chili pepper (optional)
Steps:
- Preparation of the brine : Dissolve the salt in lukewarm water and let cool.
- Preparing the rocket : Wash the leaves carefully and chop them coarsely if necessary.
- Canning : Place the arugula in a clean jar and add the garlic and spices if desired.
- Adding the brine : Pour the brine over the arugula, making sure the leaves are completely submerged.
- Fermentation : Place a weight (such as a small glass or a cabbage leaf) to hold the arugula under water.
- Storage : Close the jar without tightening too much and leave to ferment at room temperature (18-22°C) for 5 to 10 days , tasting regularly.
- Storage : Once the desired flavor is achieved, place the jar in the refrigerator to slow fermentation.
👉 Use : Fermented arugula can be used in salads, on toast, in sandwiches or as an accompaniment to dishes. Its slightly tangy and spicy taste adds an original touch to meals!
With its fast growth , balanced flavor and resistance to varied climatic conditions , Rocket 'Astro' is an excellent choice for home gardeners and lovers of fresh, fragrant greens!
