The 'Rose de Palerme' tomato is a Swiss heirloom variety with deep pink fruit , offering a perfect balance of sweet and tart flavors . Its medium-sized fruits , weighing about 140 g (5 ounces) , have a dense, juicy flesh , wrapped in a delicate but crack-resistant skin . Ideal for fresh consumption, salads or sauces , this indeterminate variety requires staking to support its vigorous growth.

Cultivation method:

Sow seeds indoors 6-8 weeks before planting out, then transplant to open ground after the last frost , when night temperatures are above 12°C . Plant 3-6 mm (1/8-1/4") deep , spacing plants 60-90 cm (24-36") apart and rows 120-180 cm (4-6') . Germination takes 5-10 days at an optimum temperature of 23-29°C (73-85°F) .

➡️ Tip : When transplanting, reduce water and nitrogen to promote strong rooting. Staking is necessary to support this indeterminate variety.

Harvesting and storage:

  • Harvesting : For best taste, harvest tomatoes when they have reached their deep pink color and are slightly soft to the touch. You can also pick them when they start to change color and allow them to ripen off the vine at 72°F or above .

  • Short term storage (quick consumption) :
    Store tomatoes at room temperature , away from direct sunlight. Do not refrigerate them , as this will alter their texture and flavor.

  • Medium term storage :
    If the tomatoes start to overripe, place them in a cool place (12-21°C) with a relative humidity of 95% . You can also store them on a tray, without them touching each other , to prevent them from spoiling too quickly.

  • Long-term conservation :

    • Freezing : Cut tomatoes into quarters and place on a baking sheet to freeze individually before transferring to an airtight bag. Ideal for sauces and soups.
    • Preserve : Peel and puree the tomatoes before sterilizing them in jars to keep them for several months.
    • Drying : Thinly slice them and dry them in a dehydrator or in the oven on a low heat for homemade sun-dried tomatoes that are rich in flavor.
