Giant Italian Parsley is an heirloom variety with large, flat leaves that is more fragrant and tender than curly parsley. A favorite in cooking, it tolerates cold well and regrows vigorously after each cut , ensuring a bountiful harvest all season long . Its reliable growth and resistance to light frosts make it an excellent choice for the garden.

Why “giant”?

The term "giant" does not refer to a legend related to giants, but rather to the impressive size of its leaves , which are much larger than those of classic varieties. This particularity gives it a more pronounced flavor and a better texture in cooking , making it ideal for soups, sauces, pestos and fresh garnishes .

Cultivation method

Stratify seeds by letting them sit overnight in the refrigerator , then soaking them in warm water for 12 to 24 hours before sowing. Sow indoors 5 to 6 weeks before the last frost , or directly into the ground in spring. Sow 1/4" (0.5 cm) deep , spacing plants 6" (15 cm) apart and rows 12-18" (30-45 cm) apart. Parsley is slow to germinate (14 to 30 days), but once established it grows vigorously .

Harvesting and conservation

Harvest when the stems have three segments , a sign that it is well developed. Cut the outer leaves first , leaving the heart intact to encourage continued regrowth .

Preservation methods:

  • In the refrigerator: Place the stems in a glass of water, like a bouquet, and cover them with a plastic bag to prolong their freshness.
  • Drying: Tie bunches together and hang them in a dry, warm, ventilated place . Once dry, crumble them and store in an airtight container.
