New Zealand spinach is an atypical heritage variety , discovered in 1770 by Captain Cook's voyages on the shores of Queen Charlotte Sound . Although it is not a true spinach and has a slightly different taste, it is valued for its resistance to high heat , unlike classic spinach which bolts quickly.

Its fleshy, succulent leaves are ideal for stews, gratins and lasagnas , where they retain their texture well. Its vigorous growth makes it an excellent option for those who want to extend the harvest of leafy vegetables throughout the summer .

New Zealand spinach was eaten by Cook's sailors to prevent scurvy , thanks to its high vitamin C content . Unlike traditional spinach, it is resistant to extreme temperatures , both heat and light frosts down to -10°C !

Cultivation method

Before sowing, soak the seeds in warm water for 12 hours to speed up germination.

Sow directly in open ground as soon as the ground is workable in spring . For an autumn harvest , a second sowing can be carried out in late summer or early autumn . Space the plants 30 to 60 cm apart and leave 60 to 90 cm between rows , because this plant develops a creeping and spreading habit .

New Zealand spinach prefers well-drained, moist, organic-rich soil , with partial shade to full sun exposure . Frequent watering is recommended to keep the leaves tender and prevent yellowing.

Harvesting and conservation

Harvesting can begin as soon as the leaves reach a good size , cutting above the crown to encourage continued regrowth. The more you harvest, the more the plant will produce!

Fresh leaves will keep for up to 10-14 days in the refrigerator at low temperatures and high humidity . They can also be blanched and frozen for later use.
