Description

Organic curly endive 'Ruffec' ( Cichorium endivia ) – offered by Gaia, a rustic and tasty variety

The 'Ruffec' curly green endive is a robust heritage variety , appreciated for its resistance to cool temperatures and its finely cut and curly foliage of a bright green .

This endive is ideal for crunchy salads and refined garnishes . To obtain more tender and less bitter leaves, they can be blanched by binding them together , thus creating a creamy white heart that softens its flavor.

To obtain more tender and less bitter leaves, the blanching technique consists of tying the leaves together about 10 to 15 days before harvesting , in order to protect the heart from light .
