Cultivation method

Seedlings should be started indoors 10 to 12 weeks before transplanting to ensure good development. When the seedlings reach 12 cm in height , it is recommended to prune the leaves to about 2.5 cm to encourage thickening of the stems and better robustness of the bulbs.

Once transplanted into the ground after the last frosts, shallots should be spaced 15 cm apart , with 45 to 75 cm between rows , to allow good root development. They prefer a rich, well-drained soil , with moderate watering , avoiding excess moisture which could promote fungal diseases.

Harvesting and conservation

Harvesting is done when the leaves turn yellow and fall off naturally . Once harvested, shallots should be left to dry for 3 to 5 days in the field or greenhouse at 23-26°C and 80% humidity to extend their shelf life.

For optimal storage, it is recommended to slowly cool and dry the bulbs to extend their dormancy period. They can be stored in a root cellar at 0-1°C, with a humidity level of 65-70% , thus ensuring their freshness for several months.
