Recipe: Roasted 'Turkish Orange' Eggplant
Ingredients :
- 2 eggplants 'Turkish Orange'
- 2 tablespoons olive oil
- 1 teaspoon of cumin powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (parsley or coriander) for garnish
Instructions :
- Preheat the oven to 200°C (400°F).
- Cut the eggplants in half lengthwise and score the flesh into diamond shapes.
- Brush the eggplant halves generously with olive oil, then sprinkle with cumin, paprika, salt and pepper.
- Place the eggplants, flesh side up, on a baking sheet lined with parchment paper.
- Roast in the oven for 25 to 30 minutes, until the flesh is tender and the skin is lightly charred.
