Recipe: Roasted 'Turkish Orange' Eggplant

Ingredients :

  • 2 eggplants 'Turkish Orange'
  • 2 tablespoons olive oil
  • 1 teaspoon of cumin powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (parsley or coriander) for garnish

Instructions :

  1. Preheat the oven to 200°C (400°F).
  2. Cut the eggplants in half lengthwise and score the flesh into diamond shapes.
  3. Brush the eggplant halves generously with olive oil, then sprinkle with cumin, paprika, salt and pepper.
  4. Place the eggplants, flesh side up, on a baking sheet lined with parchment paper.
  5. Roast in the oven for 25 to 30 minutes, until the flesh is tender and the skin is lightly charred.
  6. Garnish with fresh herbs before serving.
