Copenhagen 2 cabbage is an heirloom variety introduced in the early 1900s, renowned for its rapid production of round, solid heads. This versatile vegetable is ideal for the home garden or commercial production. The dense, compact heads measure approximately 15 cm (6 inches) in diameter, with tender white flesh and a delicate flavour. Each head weighs an average of 2 kg (4.4 lbs), providing a bountiful yield in a short time.

Cultivation method:
Start seedlings indoors 5 to 6 weeks before the last frost date in a soilless mix. Plant seeds 1/4 inch (6 mm) deep and maintain a germination temperature of 70°F (20°C) for 7 to 10 days. Once seedlings have developed, grow them on at a slightly cooler temperature, then harden them off before transplanting outdoors in late May.
Plant seedlings in well-drained, fertile soil, spacing them 18 inches (45 cm) apart in rows 30 inches (75 cm) apart. This variety prefers cool days between 55-70 °F (12-21 °C) with cool to cold nights (40-50 °F or 4-10 °C). For best results, sow in late summer for a fall harvest. Water regularly to maintain even moisture, which is crucial for well-formed heads.
