The "Chioggia" beetroot from Jardins de l'Écoumène (Beta vulgaris) is a biennial variety native to Italy, famous for its unique and spectacular roots. When cut, they reveal beautiful rings alternating white and purple, adding an artistic touch to dishes. Also called "Barbabietola de Chioggia" in Italian, this variety is distinguished by its particularly sweet flavor, ideal to be enjoyed raw or lightly steamed.
