Recipe: 'Touchstone Gold' Beetroot and Fresh Goat Cheese Salad

Ingredients :

  • 2 medium 'Touchstone Gold' beets
  • 100 g of fresh goat cheese
  • 2 handfuls of rocket
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Crushed nuts for garnish

Instructions :

  1. Cook the beets in boiling salted water for 30 to 40 minutes, or until tender. Let cool, then peel.
