This very hardy plant measures 20 to 30 cm high and is grown in fertile, fresh soil. It is harvested by cutting the leaves at ground level, if necessary. To young raw leaves, tender and sweet, you may or may not add other types of leaves to prepare exquisite salads. Arugula is part of the composition of mesclun. Cooked leaves enhance sauces and soups. After lightly sautéing them in olive oil, Italians garnish their pasta dishes with them.
