Amaranth Opopeo seeds – Annual type that reseeds – Organic Flower Seeds

With its large erect spikes of red flowers and its bronzed green foliage, this Mexican gem provokes admiring oohs and ahs among visitors to the vegetable garden. Plants can grow up to 1.8m tall and produce abundant feathery, wine-red inflorescences that make excellent cut flowers. In addition to its great ornamental value, this amaranth produces delicious leaves that are eaten when they are still young and tender. The buff-colored seeds can be dried and then used in making bread. You can also pop them in a pot like corn (without fat), one or two tablespoons at a time, and serve them with milk like cereal.
