Spinach Matador is a fast growing variety with attractive dark green savoy leaves on an upright growing plant. The succulent, flavorful leaves are perfect as baby lettuce or a home garden specialty. Because of its heat tolerance and bolting resistance, it is an excellent choice for early spring and late summer crops.

Sow seeds 12 mm (1/2 in) deep and 2.5 cm (1 in) apart in rows 30 to 45 cm (12 to 18 in) apart as soon as the soil can be worked in spring and every two weeks thereafter until late spring. Thin out to 5-7.5 cm (2-3″) after germination. Sow again in mid to late August for fall crops.
