Clary sage ‘Pink Sundae’, a pretty pastel pink plant from the Mediterranean region. The stems of these beautifully ribbed flowers make an eye-catching bouquet garnish. The plants grow in sturdy, multi-branched clumps and are between 2.5 and 3.5 meters tall and similar in width. Prefers full sun and well-drained soil. Grown as an annual in Canada. Often used for making ales and ciders. Clary sage was once valued for its therapeutic properties. Today, however, it is most appreciated for its magnificent color and its appeal to birds and butterflies.

Away from: Fennel, rue, cucumber, wormwood.
Seeding: Soaking in hot water for up to 12 hours is recommended to improve germination. Direct sow outdoors after all danger of frost has passed in spring. To encourage continued flowering throughout the season, periodically cut off spent flowers. At the end of the season, leave the flowers on the plants to encourage reseeding (and to feed birds).
Harvest: To harvest as a fresh or dried flower, harvest when the bottom 3-4 flowers open. Hang to dry.
