The erect leaves of this very ancient cabbage called dinosaur cabbage are a very dark blue green. Their rich flavor is a delight for gourmets even though they are lightly cooked. In addition to their taste quality, the narrow leaves typical of Savoy cabbages are very ornamental in the vegetable garden and stand out in the flower bed for their vigor and hardiness. For the leaves to be more tender, they should be harvested young.
